‘Epic Burger’ Man Travis Weiss Leaving Mad Fox for Rebellion

Epic burgers, Travis Weiss-style, are coming to an end at Mad Fox. This Wednesday, after 15 months of new, weekly burger specials, the Mad Fox executive chef will present his last "Epic Burger," wrapping up his tenure at the Falls Church and Glover Park restaurants. Weiss, who took over the kitchen of the brew pub in September of 2014, is taking his burger-making talents to Rebellion in Dupont, where he'll be the new executive chef and director of culinary development for the restaurant's parent group, Proof Hospitality. With eye-popping, heart-palpitating specials (oftentimes with eclectic names like The Fat Frenchman, Butterbean's Barnyard Brawl and Seven Hurley’s to Hump, for example), Weiss's reign as Epic Burger Commander-In-Chief ran for more than 60 consecutive weeks at Mad Fox, with nary a repeat during that time. For his Epic swan song, however, Weiss decided to bring back one of his crowd favorites: the Reuburgerchanga. A monster mashup combining a chimichanga, Reuben and a burger into one BMI-busting hunk of meat, the Reuburgerchanga tops a chuck-sirloin-and-deckle patty with ale-brined corned beef, stout mustard, purple kraut, Russian dressing and Swiss cheese before stuffing the whole thing in a flour tortilla and dropping it in the deep fryer. "It's my one and only repeat," Weiss says. The Reuburgerchanga will be available all-day Wednesday and ThursdayWeiss's last day at Mad Fox.

As for the Epic Burger Wednesday program, Weiss says it will continue at Mad Fox after he's gone. He tells us he's going to do something similar at Rebellion, too, though he's not sure of the name yet or if it will be a weekly or monthly special. "The [Rebellion] menu is going to focus heavily on burgers and sandwiches, a lot of out of the box stuff," Weiss says. "I've got some ideas and new twists the city hasn't seen yet." We can't wait.
