the jam hasn't been the same. And Weiss has even more up his sleeve than just the stuff that goes on top. "Wait 'til you try my burger lab grind I've been working on for a couple of years now...finally time to unveil it," he teases.
Earlier this year, we got a taste of what magic Weiss can do with the beef when he hooked up a Cabernet onion jam, poached egg and bacon-fat mayo burger for our celebration of National Hamburger Week at Ted's Bulletin. "It was sloppy. It was drippy. It was amazing," we wrote back in May.
Weiss, whose first day at Mad Fox is September 24, replaces chef Brian Wilson who joined the Falls Church restaurant just this past March.

Get ready, Falls Church, epic burgers are returning to Mad Fox Brewing Company.
Travis Weiss, currently the executive chef at Ted's Bulletin on Capitol Hill, will become the Falls Church brew pub's fourth chef in four years, when he takes over its kitchen in two weeks. Weiss, who previously worked at Mad Fox under original chef Russel Cunningham, tells Burger Days he's excited to get back to his roots and his passion. Especially when it comes to burgers.
"Epic burgers, my way, will be back," Weiss says. "As well as the original bacon jam, which was my recipe." Like sweet, delicious music to our greasy ears, this is tremendous news for lovers of that magical burger topping as ever since Weiss left in 2012,
